Alexandre Clochet-Rousselet, our Head Chef, joined the Hôtel Golf Château de Chailly in June 2022. Although he is originally from Burgundy, he has mainly worked in starred restaurants across France such as Le Pressoir d'Argent (Gordon Ramsay, Bordeaux), La Table de Pavie (Saint Emilion) and Relais Bernard Loiseau.
He makes it a point of honor to highlight local products from Bourgogne Franche-Comté, with a greater interest in those from Morvan, where he grew up. Our Chef joins forces with local producers to offer products in short circuits and above all seasonal!
On the plate, river fish have a place of choice, at the heart of gourmet dishes where taste is placed before aesthetics.
